Beetroot can be made in many different ways. Soups, curries, salads and sandwiches are some of the many dishes that you can make out of this delicious nutritious vegetable. Beetroot curry is a common side dish in Sri Lanka. It is very simple to make and you do not need so many spices for this recipe.
- 3 medium size beetroots – peels and cut into small pieces
- 1 medium size potato – peeled and cut into small chunks
- ½ a medium size onion – sliced
- 2-3 green chillies – medium sized pieces
- ½ a medium size tomato – diced
- Curry leaves
- 1 cinnamon stick
- A piece of pandan leaf.
- 1 tsp of raw curry powder
- 4-5 black pepper seeds
- ½ cup of water
- ½ cup of thick coconut milk
- 2 tbsp of cooking oil
- Salt to taste.
In a pan, stir fry pepper, cinnamon stick, curry leaves and pandan leaf for about a minute. Then, bring in onions and continue stir-frying until light golden brown. Once they changed the colour, add the diced tomatoes and the green chilli pieces. when you can see the tomatoes are half way cooked, add the raw curry powder and some salt. Mix it well. Then, add potato pieces and the beet root pieces. Mix all well for about 2 minutes with the other ingredients in the pan. Then, add ¾ a cup of water, cover with a lid and continue cooking. Now, once the potatoes and beetroots start to become tender, add the coconut milk and simmer for several minutes.
Serve it with white rice.
