Potato Curry

There are several ways to make the potato curry. The recipe I am sharing today is especially for main dishes which need more gravy to eat with.

Ingredients

  • 300g of potatoes
  • ½ medium size onion; chopped
  • 3 green chillies or few fresh red chillies
  • ½ tsp raw curry powder
  • ¼  tsp of turmeric powder
  • 3 cups of coconut milk
  • Curry leaves
  • 2 pieces of pandan leaf
  • 1 Cinnamon stick
  • 5 whole pepper seeds
  • ½  tsp of Maldives fish
  • ¼ tsp of mustard seeds
  • Cooking oil
  • Salt to taste

Preparation

  • Peel off the skin of potatoes and cut them in to chunks. .

Method

First, add potatoes, green chillies, curry powder, turmeric, curry leaves, pieces of pandan leaf, cinnamon stick, Maldives fish, some salt and coconut milk in to a cooking pot. Then, start cooking under moderate heat until the potatoes are well cooked and tender. In another pan, add some cooking oil and let the mustard seeds fry for about 10 seconds. Once they start to pop, add the onions and stir-fry. Let the onions fry with the mustards until onions turn in to light golden brown. Off the heat. Add the fried onions and mustards to the already cooked potatoes and mix well. Turn off the heat.
