Bitter gourd is a well-known Sri Lankan vegetable that has numerous nutritional and medicinal values as controlling blood glucose levels. Therefore, this is really good for ones with and who are at risk for diabetes. Knowing that, I try to make bitter guard salad whenever we make a sweet dish at home. My husband doesn’t like to eat bitter guard curry, so this is pretty much the only way I make bitter guard at home.
- Bitter gourd – 200 g
- 1 green chilli
- 1 medium size tomato
- 1 onion
- Vegetable oil
- 1 ½ table spoons of Maldives fish
- 1 lime
- 2 cups of water
- Salt to taste
- Cut the bitter guard in to thin slices and keep soaked in slightly salted water for about 15 minutes. Then, deep fry until they turn to golden color.
- Finely chop the onion, tomato and the green chili.
Add fried bitter gourd, onion pieces, tomato pieces, green chilli pieces and Maldives fish in to a salad bowl. Add little bit of salt to it and squeeze the lime in to the bowl. Mix it well.
Mix all the prepared ingredients in a bowl and adjust salt to your taste
When you mix the ingredients, use your hands to mix it instead of a spoon. Squeeze the ingredients little bit while mixing. That way, the ingredients blend well. Don’t forget to use clean hands. You can also use a glove.
