Golden Egg-Tomato Salad


Today, I am sharing the simplest Sri Lankan salad recipe with you all today. It is so easy to make, I was asking myself whether I really want to share it with you or not. I was thinking for a minute. Isn’t this the recipe that comes handy when you don’t have time to make a vegetable curry along with rice? Isn’t this the time saving, colorful, party side dish that we all love? The answer would be yes and yes. For this simple recipe, I added golden boiled eggs for an extra “kick”. Together, they make a nice egg salad.


  • 6 eggs
  • 1 medium size onion
  • 1 medium size tomato
  • 2 green chillies
  • ¼ of black pepper powder
  • Salt to taste
  • Lime to taste –optional
  • Cooking oil.


Boiled the eggs for 10 minutes. Then, cool them with ice water and peel. Pour oil to a deep bowl to deep fry the boiled eggs. Heat the oil until you can see small bubbles. Now, add the boiled eggs one by one and let them deep fry until they turn golden brown. If you are new to deep frying, fry one egg at a time. Once they are fried, keep them on a paper towel, so that it can absorb excess oil from the eggs. Now, it’s time for the tomato salad. Cut tomatoes, onions and green chillies in to thin pieces. Add them in to one bowl with pepper and salt. Mix them well, but try not to mash the tomatoes. Squeeze some lime juice and mix again. You can skip adding lime juice as the salad with tastes perfectly fine with salt and pepper alone. Then, cut the eggs in to two pieces and keep them on a serving plate in a circle. Then, fill the middle with the tomato salad. That’s it.
